Winemakers must exercise great caution when harvesting and processing frozen grapes for the production of ice wines because they mustn’t thaw before pressing.
The Bamberger winery operates in the German Nahe region, which is spread out along the sides of the river of the same name. Grapes of the traditional Riesling variety ripen on their vines, which are grown on the sandstone subsoil on the steep slopes alongside the Nahe. Even though the climate is mild, there are frosts in the winter. And it’s thanks to them that Heiko and Ute Bamberger are able to produce their delicate ice wines.
