Trademark? “Sì, amaro.”
The word amaro means bitter. But it’s not about being tough. Expect rather a perfectly balanced interplay of flavors where the sweetness of ripe fruit meets the elegant bitterness. That’s exactly the combination that gives Amarone its depth and character. A trademark indeed. A signature that cannot be imitated.
One hundred days of patience
After being hand-harvested, the Corvina, Corvinone and Rondinella grapes are naturally dried for 100 to 120 days using the traditional appassimento method. They lose water but concentrate everything that is essential: taste, aroma and structure.
The result? Intensive and layered wine with a full body, velvety tannins and juiciness that will make you happy from the very first sip to the very last.
The winemakers of Grotta del Ninfeo took their time indeed. They left the Amarone mature in oak barrels and then it rested some more in bottles. And now? It’s ready to reveal its true character. It’s set to make your evening pleasant right now or wait for the right moment in your home archives for a few more years.
